Afternoon Tea Treat



Hello Beautiful Friends,

It's such a beautiful Spring day here today. With cloud studded blue skies and tree branches swelling with buds on this sunny afternoon, what a lovely day to go for a walk in the fresh air. And, to make it completely perfect, come in the door and smell something toothsome still warm from the oven.

It's time for Afternoon Tea. Will you come?

BUTTER TART SQUARE
Original recipe from my family's Heritage Recipe Book

Base:
1 1/4 cups flour
1/2 cup butter, softened
1/4 cup white sugar

Combine flour, butter, and sugar -- mixture will be crumbly. Press into a 9x9 square inch baking pan.
 
Topping:
1/4 cup butter, softened
1 cup brown sugar
1 egg, beaten
1 tsp vanilla
1 Tablespoon flour
1 Tablespoon cream
1/2 cup raisins or currents
1/2 cup walnuts

Cream butter and brown sugar together. Add egg, vanilla, flour, cream, raisins or currents, and walnuts. Mix, then spread on base.

Bake at 375F for 20 to 25 minutes. Let cool 2-3 minutes and cut into squares. Sample while warm with your favourite brew of tea.

  4. Oh my!!! How scrummy are those!!!! It is a good job that I cannot reach into the computer and get it out to eat otherwise that cake would have been gone in seconds!!! At least this way I can dream and not have the calories, but I am sure they are a very delicious treat! xx

  9. My mother used to make these all the time as well as proper butter tarts and truthfully, I'd forgotten all about them - especially for a pot luck.
